📝 Description
This rich and creamy Buffalo chicken dip combines tender shredded chicken, tangy Frank’s RedHot sauce, and a blend of melted cheeses in a velvety béchamel base. Baked until golden and bubbly, it’s an irresistible crowd-pleaser served with crusty bread, crackers, or fresh veggies.
 🛒 Ingredients
2 cups cooked, shredded chicken (rotisserie chicken works great!)
2 cups whole milk (2% is acceptable)
4 tbsp unsalted butter
1 cup finely chopped onion (about 1 medium)
½ cup finely chopped celery (1 stalk)
2 garlic cloves, minced
4 tbsp all-purpose flour
3 oz cream cheese (block-style, not whipped)
8 oz sharp white cheddar, coarsely grated (about 2 cups)
 Dash of Worcestershire sauce
5 tbsp Frank’s RedHot Original sauce (adjust to taste)
*For serving:* Celery sticks, carrot sticks, crusty bread, or sturdy crackers

💡 **Spice it up?** Swap white cheddar for Pepper Jack for extra heat!

 👩‍🍳 Instructions

1. **Warm the milk:** Heat milk in a saucepan or microwave until just simmering. Set aside.
2. **Sauté veggies:** Melt butter in a large saucepan over medium heat. Add onion, celery, and a pinch of salt. Cook 5 minutes until soft.
3. **Make the roux:** Stir in garlic and flour. Cook 2–3 minutes, whisking constantly, until golden.
4. **Add milk:** Gradually whisk in warm milk until smooth. Return to heat and cook 2 minutes until thickened.
5. **Add cheeses:** Remove from heat. Stir in cream cheese and all but a handful of cheddar until melted and smooth.
6. **Season & add chicken:** Mix in Worcestershire sauce, hot sauce, and shredded chicken. Taste and adjust spice or salt.
7. **Broil:** Preheat broiler. Pour dip into a 2-quart baking dish, top with reserved cheese, and broil 2–3 minutes until bubbly and lightly browned.
8. **Serve hot** with your favorite dippers!

 💡 Make-Ahead Tip
Prepare the dip (without broiling) up to 3 days ahead. Store covered in the fridge. Reheat gently on the stove, then broil before serving.
