 *Ingredients:*

- 2 ripe but firm mangoes (peeled, pitted, and cubed)  

- 1 tablespoon vegetable oil or coconut oil  

- 1 medium onion, finely chopped  

- 2–3 garlic cloves, minced  

- 1-inch piece of ginger, grated  

- 1 green chili (optional, for heat), finely chopped  

- 1 (14 oz / 400 ml) can coconut milk  

- 1 cup vegetable or chicken broth (or water)  

- 1 medium tomato, chopped (optional, for tanginess)  

- 1 teaspoon ground turmeric  

- 1 teaspoon ground cumin  

- 1 teaspoon ground coriander  

- ½ teaspoon garam masala  

- Salt, to taste  

- Fresh cilantro (coriander leaves), for garnish  

- Cooked basmati rice or naan, for serving  


*(Optional additions: diced potatoes, chickpeas, or paneer for extra heartiness)*

#### **Instructions:**


1. **Prepare the mangoes:**  

   Peel and cube the mangoes, being careful not to overripe them (they should hold their shape during cooking).


2. **Sauté aromatics:**  

   Heat oil in a deep skillet or saucepan over medium heat. Add chopped onion and sauté until golden (about 5 minutes). Add garlic, ginger, and green chili (if using); cook for another 1–2 minutes until fragrant.


3. **Add spices:**  

   Stir in turmeric, cumin, and coriander. Cook for 30 seconds to toast the spices, stirring constantly to prevent burning.


4. **Add liquids and simmer:**  

   Pour in the coconut milk and broth (or water). Add chopped tomato (if using). Bring to a gentle simmer and cook for 5–7 minutes to let the flavors meld.

5. **Add mangoes:**  

   Gently stir in the mango cubes. Simmer for another 5–8 minutes—just until the mangoes are tender but not mushy.

6. **Finish with garam masala:**  

   Sprinkle in garam masala and season with salt to taste. Stir gently to combine.

7. **Garnish and serve:**  

   Remove from heat. Garnish with fresh cilantro. Serve warm with steamed basmati rice, naan, or roti.

**Tips:**

- For a vegan version, use vegetable broth and ensure your garam masala is vegan-friendly.

- If mangoes are very sweet, add a squeeze of lime juice at the end to balance the flavor.

- Avoid overcooking the mango—add it toward the end to preserve texture and freshness.
