### Crispy Pork Milanese


This simple dish features tender pork chops coated in a crunchy breadcrumb crust. It's quick to prepare and pairs well with a fresh salad.


#### Ingredients (Serves 6)

- 1 ½ pounds boneless pork chops (about 3 chops, 1-inch thick)

- 1 cup all-purpose flour (130g)

- 2 large eggs

- 4 tablespoons water

- 1 ½ cups panko breadcrumbs, slightly crushed (130g)

- 3 tablespoons Italian seasoning

- 3 tablespoons finely grated Parmesan cheese (optional)

- Salt and fresh ground black pepper

- Oil for frying


#### Instructions

1. Prep the pork: Cut each pork chop in half horizontally to create thinner pieces. Place between plastic wrap or parchment and pound to about ¼-inch thickness using a mallet or heavy object.


2. Season: Mix ½ teaspoon salt and ½ teaspoon pepper in a small bowl. Sprinkle evenly over both sides of the pounded chops.


3. Breading setup: Use three shallow bowls. Put flour in the first. Whisk eggs and water in the second. In the third, combine breadcrumbs, Italian seasoning, Parmesan (if using), and a pinch of salt.


4. Bread the chops: One at a time, coat in flour (shake off excess), dip in egg mixture, then press into breadcrumbs. Place on a lined baking sheet.


5. Fry: Heat a large skillet over medium with enough oil to cover the bottom by ⅛ inch. When hot (test with a breadcrumb—it should sizzle), add 2-3 chops. Cook 2-3 minutes per side until golden and pork reaches 145°F internally. Drain on a rack and sprinkle with salt. Repeat with remaining chops, adding oil as needed.


#### Air Fryer Option

Lightly spray breaded chops with oil. Air fry at 375°F for 8 minutes, flip, and cook 5-10 more minutes until golden and 145°F inside.
